Try this one – http://splodzblogz.co.uk/2012/07/01/capricorn-challenge-chicken-and-goats-cheese-risotto/ – although the one I did here had no cheese in and I used basmati rice which isn’t traditional but works fine; you can pretty much use anything you like in them.

mmmm just popping out to tesco later, I’ll have a look, as I add a stock cube to my butternut squash risotto
