Capricorn Challenge – Pizza

One of the ingredients in my hamper of goodies from Ethel the Goat was ready made pizza bases. Not something I’ve used before but after trying them out something I’ll definitely be using again – so quick and easy and you can choose your own toppings!

Splodz’s Goats Cheese Pizzas

The thing with pizzas, as I mentioned above, is you can have whatever you like. There were two pizza bases in the box so my hubby and I took one each, placed them on trays, and got creating. These are our creations but really it’s game on for toppings!

Mine

I went for toppings suggested by my brother-in-law, who was visiting when the hamper arrived and assured me the spinach, goats cheese and caramalised onion was a match made in heaven. He was right.

After 10 minutes or so in the oven the pizza was ready and oh, it was good. Capricorn Goats Cheese works so well on a pizza, and its tangy flavour sits really well with the onion and spinach. I gave mine a little swig of really nice olive oil before I ate it – the pizza bases needed a little moisture I felt.

My Husband’s

For his pizza, my husband took the goats cheese and broke it into chunks rather than slices, and he had loads more than me. Not surprising really. He added the olives too, which I’m not a great fan of – but that’s the beauty of these pizza bases isn’t it? He said his mountain of toppings was one of the best pizzas he’s ever had – praise indeed.

We both agreed that the Capricorn Somerset Goats Cheese made these pizzas and we would definitely be getting the read made bases in again for a quick mid week meal.

Disclaimer: Ethel the Goat sent me a hamper of ingredients, including some Capricorn Somerset Goats Cheese, so that I could take part in the Capricorn Challenge. I used the ingredients along with things I already had to create this recipe. I have not been told what to write and I have been no less honest as a result.
