RECIPE | MELT IN THE MOUTH ROCKY ROAD

This post is me keeping a promise made to some friends before Christmas, after a couple of successful batches of the simple sweet treat that is rocky road. If you’re not sure what this is, consider a pile of tasty treats coated in chocolate and left to set in the fridge – that’s basically it.

As seems to always be the case with the recipes I share here on Splodz Blogz, this one has been adapted from a handful or more other recipes I found in books and online. What I write below seems to work rather well for me, and has done more than once which is always a good sign – I hope it does for you too!

Recipe | Melt in the Mouth Rocky Road

To make 12 large or many more small pieces of rocky road you will need…

A pile of sliced Snickers bars. And I didn’t eat a single piece. Honest…!

The method is so very simple, which is probably why it’s worked for me as baking is not my forte! Break the chocolate into chunks and melt in a glass bowl over some water on the hob. Once completely melted take off the heat and stir to cool down a bit.

Add the rest of the ingredients and stir to coat in the chocolate. I add the cashews and Rice Krispies first, then the snickers and the mallows. I leave the mallows until last because they are the most likely to melt, and I can just add as many as the mixture will take, bit by bit, until the chocolate is all used up. You don’t want the mixture to be too dry, just a bit rocky.

Once everything is mixed, tip it out into a tray lined with baking paper, spread out and squish down to form a layer about an inch high, and put it in the fridge to set. I leave mine overnight. Once set, turn out onto a board and cut into as many squares, rectangles and odd shaped pieces as you fancy.

In reality this recipe is simply a starting point – you can change up rocky road any which way you like. LincsGeek prefers a dark chocolate with a spoonful of golden syrup to loosen up the set a bit, and I know others who like to add dried fruit such a raisins into the mix. Swap the snickers for Bounty or Mars Bar, use salted peanuts instead of cashews for a different flavour, and/or sprinkle the top with desiccated coconut or jelly tots before it sets – have fun!
