Tonight, at the request of my other half, I made a home-made carrot soup for dinner. It’s a favourite but we haven’t had it for ages. I can recommend it, it’s really easy (I’m going to attempt to give you a recipe now!):
- 4 large carrots
- 1 small white onion
- half a potato
- 600ml vegetable stock
- ground black pepper to taste
Peal and finely slice the carrot and onion, finely slice the potato (I don’t bother peeling the potato).
Fry in some olive oil in a large saucepan until softening.
Add 600ml vegetable stock and bring to the boil, then turn down the heat and simmer until the veg is soft – takes about 10-15 mins depending on the size of the slices!
Add some ground black pepper.
Once soft, blend until smooth.
Serve with gorgeous fresh bread.
Let me know if you give it a try! If you want to make it slightly less healthy you can use butter instead of olive oil and add some cream when serving 🙂
