It’s not like we’ve had a lack of vegetables over the last few days (my Christmas plates were full of veg), but we’ve also overdone it on the carbs and the chocolates. Of course! So for lunch today I made carrot soup. Carrots, an onion and a small potato. Oh and some vegetable stock. The perfect way to soften the blow of the chocolates and sweets I’m planning on consuming for the rest of the week!!
